PHP 8.0 used when PHP 7.4 should be used for mod-php (used by Roundcube, PMA, etc)

I will update this issue with a more accurate title and desc later, but I want a # for it so users can track it.

I have opened a issue with the SURY repo, because I think the default version for the OS should be shipped. See https://github.com/oerdnj/deb.sury.org/issues/1548

If this won't be changed (for whatever reason), we will have to alter the code to install the correct version. The Perfect Server guide might need a update aswell.

Answer from Ondrej is clear, so we need to fix this ourself :)
