I have opened a issue with the SURY repo, because I think the default version for the OS should be shipped. See https://github.com/oerdnj/deb.sury.org/issues/1548
If this won't be changed (for whatever reason), we will have to alter the code to install the correct version. The Perfect Server guide might need a update aswell.
